ANZAC Day

Today is ANZAC Day, a national day of remembrance in Australia and New Zealand that commemorates all those who have served and died during War. Observed on this day each year, it was originally created to honour the members of the Australian and New Zealand Army Corps (ANZAC) who served in Gallipoli during WWI (1914-1918).

Anzac biscuits were often made during this time to sell for fundraising, or to serve at fetes and other events held to raise money for the war effort. It is this connection between the biscuits and the war that led to the use of the name “Anzacs”.

INGREDIENTS

1 1/4 cups plain flour, sifted
1 cup Uncle Tobys Traditional Rolled Oats
1/2 cup caster sugar
3/4 cup Coles Desiccated Coconut
150g unsalted butter, chopped
2 tbsp golden syrup or treacle
1 1/2 tbsp water
1/2 tsp Coles Bicarbonate Soda

METHOD

Preheat oven to 160C. Place the flour, oats, sugar and coconut in a large bowl and stir to combine.

In a small saucepan place the golden syrup and butter and stir over low heat until the butter has fully melted. Mix the bicarb soda with the water and add to the golden syrup mixture. It will bubble whilst you are stirring together.

Pour into the dry ingredients and mix together until fully combined. Roll spoons of mixture into balls and place on baking trays lined with non-stick baking paper, pressing down on the tops to flatten slightly.

Bake for 12 minutes or until golden brown.
