Pancake Day!
Tuesday, 1 March 2022 is Shrove Tuesday, or Pancake Day. While it is a significant date in the Christian Church, it is also a delicious excuse to eat pancakes, (but really, do we need an excuse!)
Using a pre-mix bottle of pancake mix is a great way for a tween to start learning more independence in the kitchen. Yes there’s a stove involved, but with the ingredients pre-measured it can almost be a solo undertaking – perhaps they can even start making breakfast regularly for the whole family.
Pancakes can be as healthy or indulgent as you like – top them with berries and Greek yoghurt or lemon and sugar, or go all out with syrup and ice-cream, chocolate sauce and even bacon! (Hint: we’ve tried this combo and it’s just a bit…weird).
If you want to go all out and make them from scratch, try this recipe for deliciously fluffy pancakes. These are quick to make (20 minutes) and the batter doesn’t need to sit before cooking…
INGREDIENTS
1.5 cups all purpose flour
1 tbsp and 1 tsp baking powder
1 tsp salt
1 tbsp sugar
1 1/4 cups milk
1 egg
3 tbsp butter, melted
METHOD
Sift all dry ingredients together into a bowl.
Make a well in the centre and add the milk, egg and melted butter (slightly cooled).
Heat a lightly buttered pan and cook pancakes on both sides until lightly browned (you’ll know when they’re ready to flip when bubbles start appearing on the surface).
Serve hot with maple syrup, butter or Nutella…
Makes about 10 depending on the size you like!
